Dry but not quite dry, quite English in style, we had fun blending a cider apple based cider basing it on a mix of the highly reputed variety Kingston Black and a good amount of another mild sharp apple call Brown’s apple. It fermented slowly - we were trying to achieve a “keeve”, but it didn’t quite go to plan, tricky stuff that keeving, but we did get nice apple fruit flavours. The result is a good apple flavour with a fresh finish, with interesting tannins and a little funk.
